One of my favorite brands, Pacific Natural Foods, is hosting a recipe contest for the holiday season and I couldn't resist throwing my hat into the ring. They're calling it the Everyday Chef Challenge and that definitely sounds like me, since one of my main focuses is fitting delicious, healthy food into everyday life.
The contests asks for recipes that feature one or more of Pacific's products and since I use their organic low sodium vegetable broth and their unsweetened almond milk on a regular basis, this was no challenge at all.
I submitted a hearty, satisfying and healthy main dish to the contest: Barley Brown Rice Risotto.
